Cook the noodles acccording to package directions. Drain and set aside.
Meanwhile, heat a large skillet to medium-high. Add the oil and the vegetables and sautee until tender, about 5 minutes.
While sauteeing, stir together the soy sauce, sesame oil, sugar, and mirin.
Once the vegetables are ready, dump in the sauce and the noodles. Toss to combine. Cook as needed to tighten the sauce, then serve immediately with a sesame seed garnish.
